Ingredients

  • FOR THE STEAKS
  • 4 sirloin steaks
  • A splash olive oil
  • 30g butter
  • 1 tsp rosemary, chopped
  • 1 tsp thyme, chopped
  • FOR THE CHIMICHURI
  • 1 red chilli
  • 2 handfuls spinach leaves
  • 1 handful basil
  • 3 cloves garlic
  • 1 lemon, juice and zest of
  • 100ml olive oil
  • SERVE WITH
  • French fries and salad.

METHOD

  1. To make the chimichuri sauce simply add all the ingredients to a blender and process, I prefer to leave it slightly coarse
  2. To cook the 'perfect steak' rub oil all over your steaks and season generously with sea salt and ground pepper
  3. Melt the butter in a small bowl and add the chopped herbs
  4. Heat a frying pan to hot and add the steaks to it, don't overcrowd the pan
  5. Cook on each side for around 5 minutes for rare (add 2 minutes for medium, 4 minutes for well done) and in-between turns brush generously with the herb butter
  6. Serve with the chimichuri sauce drizzled over and with oven fries and salad
