Bring some Argentinian inspired flavour to your steak!

Ingredients
- FOR THE STEAKS
- 4 sirloin steaks
- A splash olive oil
- 30g butter
- 1 tsp rosemary, chopped
- 1 tsp thyme, chopped
- FOR THE CHIMICHURI
- 1 red chilli
- 2 handfuls spinach leaves
- 1 handful basil
- 3 cloves garlic
- 1 lemon, juice and zest of
- 100ml olive oil
- SERVE WITH
- French fries and salad.
METHOD
- To make the chimichuri sauce simply add all the ingredients to a blender and process, I prefer to leave it slightly coarse
- To cook the 'perfect steak' rub oil all over your steaks and season generously with sea salt and ground pepper
- Melt the butter in a small bowl and add the chopped herbs
- Heat a frying pan to hot and add the steaks to it, don't overcrowd the pan
- Cook on each side for around 5 minutes for rare (add 2 minutes for medium, 4 minutes for well done) and in-between turns brush generously with the herb butter
- Serve with the chimichuri sauce drizzled over and with oven fries and salad
