Ingredients

  • 250g plain flour
  • 2 tsp baking powder
  • 175g golden caster sugar
  • 135g coconut yoghurt
  • 75ml almond milk
  • 1 lemon, zest and juice of

METHOD

  1. Preheat your oven to 180c/170c fan/350f and lightly grease a mini bundt tin
  2. Add the flour, baking powder and sugar to a large bowl and use a whisk to combine
  3. Pour in the yoghurt, almond milk and lemon juice and zest and mix again
  4. Bake for 20 minutes or until cooked through and a skewer comes out clean
  5. Cool in the tin for 10 minutes before inverting onto a wire rack
  6. Dust with icing sugar and serve warm
