Ingredients

  • FOR THE GINGER CHICKEN MEATBALLS⠀
  • 3 chicken breasts, finely chopped (quicker than you'd think)⁠⠀
  • 3 spring onions, chopped (reserving green pieces for adding at the end)⁠⠀
  • 2 tbs soy sauce⁠⠀
  • 1 clove crushed garlic⁠⠀
  • 1 tbsp grated ginger
  • 3 tbs panko breadcrumbs⁠⠀
  • 1 egg
  • FOR THE SWEET AND SOUR SAUCE⠀
  • 1 tbs corn flour⁠⠀
  • 200ml water⁠⠀
  • 2 cloves garlic, crushed⁠⠀⁠⠀
  • 2 tbs soy sauce⁠⠀
  • 4 tbs ketchup⁠⠀
  • 2 tbs white wine vinegar⁠⠀
  • 3 tbs soft brown sugar⁠⠀
  • ⁠FOR THE FRYING PAN⠀
  • 1 onion, cut into thin wedges⁠⠀
  • 1 red pepper, cut into strips⁠⠀
  • 200 g chopped pineapple⁠⠀
  • Sesame seeds, lightly toasted

METHOD

  1. Preheat your oven to 180c/350f and line an oven tray with lightly greased foil.⁠⠀
  2. Bring a saucepan of water to a boil for the rice and cook as per packet instructions.⁠⠀
  3. Combine the meatball ingredients in a medium sized bowl and then use your hands to shape them into balls, roughly golf ball size. Place them on the prepared baking sheet and then into your oven for 20 minutes.⁠⠀
  4. Meanwhile, combine the cornflour and water in a bowl and mix until smooth. Add the remaining sauce ingredients and mix well.⁠⠀
  5. Large frying pan: add the sliced onion and red pepper, and fry until soft. Add the pineapple pieces and then pour in the sweet and sour sauce, simmer for a few minutes while it thickens. Add the chicken meatballs from the oven and toss to coat them in the sauce.⁠ Add a splash of water if the sauce is too reduced.
  6. Serve sprinkled with sesame seeds, spring onions and with rice on the side. Eat with chopsticks for full fakeaway effect.
